tasty nz potatoes

One of my favorite dishes from growing up in New Zealand was eating those tasty crispy potatoes my mum would cook with the roast. Now this recipe doesn’t include the roast but I love making the Tasty NZ Potatoes just like this.

Trusty Oven

This really comes down to using whatever oven you have in your house.

I love using the oven, it’s under-rated imo.

My Favorite way to cook Tasty NZ Potatoes

Potatoes NZ Style

Trim potatoes and cut into quarters.  You DO NOT want small potatoes

Soak potatoes in water while you boil water

Boil water

Boil potatoes in salt and baking soda for 10 minutes.  You DO NOT Want them over cooked

As you potatoes are boiling, turn your  oven on to 400 Degrees

Add olive oil, beef tallow or goose fat to the pan with sides and put it in the oven. Not too much oil, you just want to cover the bottom of the pan

Strain potatoes from pot

Put potatoes back in pot and shake around slowly to rough up edges

Pull pan from oven and GENTLY put the potatoes into the pan, GENTLY baste the potatoes before putting pan back into the oven

Rotate potatoes every 15 minutes

Pull and SERVE them Tasty Potatoes!

Notes:

It is IMPORTANT to note, use beef tallow, for me it’s been the best so far. IF you decide that your potatoes are a little smaller, lower the temp to 375 or cook them less and rotate ever 15 minutes but definitely not lower than 375 Degrees. You can always add time, you can’t take it away so keep an eye on those Tasty Potatoes!
